Citrus & Calendula Spritz

Alcoholic Version

Approximately 180–200ml
Served over ice in a wine, or large highball glass

Ingredients

  • 25ml Aperol or elderflower liqueur

  • 15ml orange liqueur (e.g., Cointreau)

  • 100ml sparkling wine or prosecco

  • 1 tbsp calendula-infused syrup*

  • Dash of soda water

  • Orange slice & calendula petals to garnish

Method

  1. Shake the Aperol, orange liqueur, and calendula syrup with ice.

  2. Strain into a wine or highball glass over ice.

  3. Top with sparkling wine and a dash of soda.

  4. Garnish with an orange slice and a few calendula petals.

Non-Alcoholic Version

Around 150–180ml
Served over ice in a tall glass

Ingredients

  • 100ml blood orange soda or San Pellegrino Aranciata

  • 1 tbsp calendula syrup*

  • 1 tsp apple cider vinegar (optional – to mimic Aperol's bitterness)

  • A dash of soda water

  • Orange slice & calendula petals to garnish

Method

  1. Combine everything over ice in a tall glass.

  2. Stir gently. Garnish and serve.

*Calendula syrup: Simmer 1 tbsp dried calendula in 100ml water for 10 mins. Strain, then dissolve in 100g sugar or honey while warm. Cool before use.
