Alcoholic Version
Approximately 180–200ml
Served over ice in a wine, or large highball glass
Ingredients
25ml Aperol or elderflower liqueur
15ml orange liqueur (e.g., Cointreau)
100ml sparkling wine or prosecco
1 tbsp calendula-infused syrup*
Dash of soda water
Orange slice & calendula petals to garnish
Method
Shake the Aperol, orange liqueur, and calendula syrup with ice.
Strain into a wine or highball glass over ice.
Top with sparkling wine and a dash of soda.
Garnish with an orange slice and a few calendula petals.
Non-Alcoholic Version
Around 150–180ml
Served over ice in a tall glass
Ingredients
100ml blood orange soda or San Pellegrino Aranciata
1 tbsp calendula syrup*
1 tsp apple cider vinegar (optional – to mimic Aperol's bitterness)
A dash of soda water
Orange slice & calendula petals to garnish
Method
Combine everything over ice in a tall glass.
Stir gently. Garnish and serve.
*Calendula syrup: Simmer 1 tbsp dried calendula in 100ml water for 10 mins. Strain, then dissolve in 100g sugar or honey while warm. Cool before use.
